Maple syrup is made in the springtime, usually between February and April.
The temperatures need to be in the 20s at night and in the 40s during the day for a good sap run. It takes approximately 40
gallons of sap from the maple tree to produce 1 gallon of maple syrup. There are four grades of maple syrup: Vermont Fancy,
Grade A Medium Amber, Grade A Dark Amber, and Grade B. Following is a guide on the different grades of maple syrup.
